Dinner 911



Yesterday, I was brain-drained from catching up on my bookkeeping.  Tired, cranky and hungry.  The crankiness precluded any desire to go out to eat and the refrigerator was EMPTY.  So, I went to my pantry and pulled out "The Bag".  I keep a reusable grocery bag filled with the ingredients to this quick, hearty meal.


My gourmet-minded friends will be rolling their eyes back in their heads by now, but this is amazingly good and very satisfying... especially to a tired, cranky soul.  My supplies were so low, I didn't even have cheddar cheese on hand to top it off!  Can you imagine a refrigerator without cheddar cheese?  It is delicious without it.  Thank goodness I had an egg and a 1/3 cup of milk to whip up the Jiffy cornbread!  LOL!  Once again, I know you purist are scoffing, but this IS a 911 meal.  LOL!


Bean and Hominy Soup (from a magazine so long ago, I can't remember which)

3  (15.5 ounce) cans Great Northern beans, undrained
1 (15.5 ounce) can hominy, undrained (I usually use the large can, since I love hominy)
1 (14.5 ounce) can no-salt-added stewed tomatoes, undrained
1 (11.5 ounce) can bean with bacon soup, undiluted
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 (11 ounce) can whole kernel yellow corn, undrained
1.5 cups of water (I usually use about 2/3 cup)
2 bay leaves
3 Tablespoons chopped fresh cilantro or 1 Tablespoon dried cilantro
1 teaspoon ground cumin
1 cup shredded cheddar cheese

Combine all ingredients, except cheese in a large Dutch oven, and bring to a boil.  Cover, reduce heat and simmer 30 minutes stirring occasionally.  Discard bay leaves.  Ladle soup into bowls, and top with cheddar cheese.  Yield:  8 servings


Evan, who generally cannot fathom a meal without meat, loves this simple comfort food.  It is a great 911 Dinner.  I'll be restocking The Bag for future emergencies.  =)

I love hominy too and I don't even know if I can buy it around here--it's been a long time. I love the soup recipe. Of course, I would not have opened any cans. Rather, I would have run outside to pick fresh corn, beans, made a quick tomato sauce, dried some herbs and and ground some dried corn for the bread. Whew! I'm glad you didn't mention wine. The stomping of the grapes is not something I enjoy doing!! = )

LOL! Bonnie, I knew you would pick all the fresh ingredients. hee hee. And, I did enjoy a crisp glass of Clos du Bois chardonnay while I was slaving over the stove. LOL! Always helps with the crankiness.

Oh this looks wonderful... The other night I took the left over ham we had for Christmas, and made Pinto Beans and ham, and JIFFY cornbread. My hubby likes chopped onions and cheeese on top. What an old fashioned but tasty meal.

what a great idea. I would of never thought of keeping that kind of stuff stockpiled for those type of meals when you've not been to the grocery store. Brave.

Mmmmm...I love soup! I make it about once a week around here. Too bad laine doesn't really appreciate it. :-) And we LOVE Jiffy. I still think it's the best and so sweet!

What a great idea to have a 911 kit handy. I might have to do that too. Although seems like every night is a 911 night around here! haha! Hopefully that soup gave your soul a little lift! :)

Bonnie forgot to mention she would have to shovel snow to get to the affore mentioned garden plots for the ingredient round-up. People who love to cook are by nature very practical. We turn our noses up at nothing that works. I think your soup sounds wonderful. Have a great day. Blessings...Mary

You know, I make my own cornbread, but I like Jiffy just fine. I think it's one of the best mixes out there!

Oh it looks wonderful! I just love meals that are made from what's on hand! I don't do that near enough....I spend too much time (and money) running to the store for a few items.
I love the 911 bag idea! I'm going to dream up one that we can have in a pinch...
I've been like a bird out of a cage since I delivered the tax info to accountant! I love getting it out of my hands and into his!

I had no idea that you had a bag stocked with 911 items. Ingenious! I'm looking at your spices trying to figure out why I have never had dried cilantro in my spice rack. I may have to remedy that, although I'm a huge fan of the fresh. And, yes, thank goodness you had an egg and some milk for that Jiffy cornbread. It's kind of like dinner and dessert in one if you ask me! YUM!

There is nothing better in my book than a good hearty soup and cornbread on the side for dinner. We have that combination often. With only two of us at home it is a easy and cozy dinner to serve for a few days of leftovers.

I've always been crazy for hominy...and soup so this soup looks fantastic to me! I also grew up on Jiffy. You can't beat the price or the quick and easy preparation and it tastes great to boot. ;) Perfect 911 meal!

I love your idea of having a bag filled with the necessities of a 911 meal--we all need one from time to time, don't we? Your soup looks so good. I probably have some of the Jiffy Cornbread mix in my cupboard so I've already got a start for my 911!

I just stopped over from being at the Harwards and thought I would stop by and say Hello, I scrolled down through your blog and was so excited to see a Meal from a Bag. My family started these a while back but then fell away from them. I printed your reciepe and headed right to the kitchen to fill a bag.
