Prayers for the North East tonight...
On busy days, I end up with some kind of one-pot-wonder for dinner. Just depends on what's in the fridge and pantry. I'm lucky; my Beloved loves these concoctions, which usually end up veggie heavy and healthy. Very lean ground beef, onion, bell pepper, fire roasted tomatoes and cabbage... Spices and spices and spices... went into this one. Warm and filling. ;)
My heart goes out to our neighbors in the North East tonight and the next few days. This blizzard is promising to be exceptionally brutal. Prayers for all...

One pot meals are often our favorites around here. Problem is, sometimes I don't remember how I have made them . . .

We're watching the news about the blizzard. Oh my, can't imagine a storm like that.
We did have rain today, but it was refreshing, and gave my plants on the balcony a nice drink and wash.
I love those kind of meals that clean out the frig.

Your pot looks like my pot of dinner did tonight! Instead of cabbage we had spinach, just about all of the other ingredients were the same-yum, yum!

One pot meals sounds a great idea
I love cooking with just one pot, so easy and less mess, it looks wonderful. My family is in PA and they have a lot but not as much as predicted.....
Our news is saying things were better than expected:) Thank goodness!
So far so good up here in the great NE. Now, Worcester MA has over 27" & counting down to many more. They may break their 40" record before days' end. I'm in the White Mtns & we haven't had too much snow yet but our snowfall began early today, about 4AM so too soon to tell.
The weather guys overestimated bombogenesis aka snowmageddon. However, NYC & BOS are shut down. Snow days for all!
One pot cooking is fab. And so tasty.

Hoping the news won't be as bad as we all thought it would be. Your recipe is so similar to mine except I sauté lots of mushrooms and leave out cabbage. Here in the South we call it Beef Pilau.
Seems some places didn't get quite the storm that was predicted, but I'm sure some areas got more than their fair share. I love throwing things together to come up with a meal. Whatever is quick and easy. Hugs, Tammy
Now that my friend, could be on my stove. It sounds like one of my non recipes and I am sure it was delicious! Great for a cold evening. Just thinking about the storm made me cold.
It is amazing what you can cook up from the contents of the fridge and how tasty those meals are isn't it! I hope that the storm is not as bad as predicted. xx

Thank you for your prayers dear Tanna, we did not get the brutal prediction. It was deep, just not as bad as they said. My neighbor was so kind to snow blow the driveway. People really are wonderful. Blessings dear. xoxo Catherine
