Hitting the Spot in the Heat...


We are still scorching in Texas.  Finally got a bit of rain yesterday... a spit, but still more than we have had in a long, long time.  I am grateful for every drop.

Anyway, I made this salad from Mary's One Perfect Bite last night for dinner.  It hit the spot (and worked for low carb).  I wasn't able to find the dill heads that Mary used and substituted regular fresh dill instead.  It was very good! Served it up on a spicy bed of baby arugula. 

I have to confess to adding a drizzling of balsamic vinegar... the Italians have hooked me!  We had it with pizza, on sandwiches, on salads and a balsamic reduction on steak; it was all GOOD.  A little dab of Modena balsamic vinegar and a drizzle of a good extra virgin olive oil... oh, my!!  I may be eating it on dessert next.  ;)  Just sayin'.

We are hooked on balsamic too. Did you know there is a white balsamic when you don't want so much color in a dressing? It's not quite as tasty as the regular. I have "handled" balsamic vinegar that cost $125 a bottle (no, I didn't forget the decimal point) and wondered just what it would taste like. Still wondering!

Hope you get some more nice gentle rain to cool it down. We like balsamic vinegar too, and I like to put a splash of it in a small dish with virgin olive oil, and dip good bread in it. Yum; your salad looks perfect.

It looks great. I also like balsalmic vinegar ... and, by the way, that's a great plate to have a salad on! It actually makes the salad look bigger! :-)

Glad you got at least a spit of rain. I don't think we'll get much of Irene, but hopefully some of the rain will wind up here. Have a wonderful weekend!

Now that looks wonderful!!!!!!!!! Oh my will the 100 plus weather stop...I think this is more than I have ever experienced in my lifetime...we have stayed in all summer, oh my! Can you imagine going to a football game in this heat?

Well, you and Nanny...Balsalmic fiends! I have to admit, I like it too. And when we get sick of Modena Balsalmic... White Balsalmic is a wonderful change up.

P.S. I want that shrimp...now.

Mmmmmmm...Mary always has fantastic recipes and you made this one look so good! I love shrimp!

We have "battened down the hatches" and now will wait out the hurricane. I hope it loses power and doesn't do the damage they are prediocting :(

anyway, that dish looks wonderful and I love balsamic too!!

I love balsamic but my husband thinks the taste is too strong. :/ I used to make a really great chicken dish that called for it, along with mushrooms ... my entire family loved it, even the 12 year old who is so picky. Of course, now I don't eat meat anymore, so haven't made it in a few years. I never buy salad dressings -- always just make my one with olive oil, lemon juice or vinegar, s&p and garlic powder. Yum! I'm a balsamic vinegar addict, and I've never even been to Rome. I've never tried it on pizza, though.

That dish looks seriously amazing. And I have to agree about the balsamic. My husband doesn't care for it which I think has made me more of an addict. I can't use it in my tossed salad with dressing so I have to drizzle it on my own serving. I'm just sure that I'm getting a stronger dose this way than if it were just in the dish! Let me know about the dessert... I hadn't thought of that! :)

Yes....I love Balsamic, love it, love it. I like it straight on salads! It's hard to use dressing once you get use to balsamic, so fresh tasting.
